01 — origin

From an internal tool to an independent product.

2022A spreadsheetBuilt in week three of a client project, to answer one question about waste.
2023An internal toolFour restaurants, one Python script, and a chef who refused to go back.
2024A productSeparate company, separate team, first twenty paying kitchens.
2026Independent140 kitchens across five countries. Profitable since March.
02 — what it does
Demand forecastTomorrow’s covers, per dish, with a visible confidence band.
Waste ledgerWhat was thrown away, what it cost, and which prep caused it.
Menu economicsMargin per dish after real prep time, not theoretical yield.
OrderingOne tablet screen. Approve, adjust, send. Under ninety seconds.
03 — how it was built

The first version was a spreadsheet with a scheduled script. It ran for eleven months before we allowed ourselves to call it a product. The current system is deliberately small: a Postgres database, a Python forecasting service, and a web client that works on a tablet with wet hands.

We have said no to a mobile app four times. Chefs do not want another app; they want the tablet on the wall to be right.
